First Day of Spring Semester!

Well now that I'm back at my dorm sweet dorm, its time for school! 

Today is the first day of spring semester and I am super excited to start new classes and meet new people! I am a little bit nervous about how the difficulty. I am kind of, no I am a nerd. I'm studying Mechanical Engineering and apparently some of my classes are going to be intense!

Airports


It's finally here! I'm going back to Dallas today!

I'm just sitting in the airport, listening to Macklemore, and getting my blog on!


I don't know about you, but for some reason I have always secretly seen airports as like a little runway. I know, most people are like sweats or whatever is comfortable, but my first instinct is to bust out my rocking new outfit. Actually, I blame Theresa. Homegirl always looks fabulous at the airport, which I'm sure prompted me to follow in her footsteps. I'm going to be honest, being the adoring younger sister I am, I pretty much copied all she did up until, well, I probably still do. Hard to break a habit, I guess. 

Well I have to go board my giant plane now!

Peace Out Denver

Despite being beyond excited to head back to school, I'm dreading doing all my laundry and packing up to go back to school just based on the state my closet is currently in. It looks like a tornado went through there.


Yeah I know, I swear I am usually cleaner and more organized.

Would it be wrong to have a suitcase of only shoes?? Just asking, totally hypothetical...


It was weird how being back home it was like nothing changed. It was like we never left each other, nothing had changed, which was odd because basically everything has! We're spread across the country, all with different majors, doing different activities, attending seriously different kinds of schools.

Adorable, right? This was taken by my friend Ryan after an intense nerf gun war. Yeah I know... Nerf guns.. we're all 18-19 but we don't want to grow up so we do everything we can to avoid it.


Even though I'll miss my parents, my friends, and those gorgous mountains, I cannot wait to go back to school! In the last month it has been so weird not seeing my school friends everyday, especially my crazy roommate/best friend Daniela!

Yeah, she's a hottie :)
But actually she is! And I've missed that kid like crazy since we have been at home for break.
I am going to straight up pounce on her when I see them.

If I was into camping, or well any outdoorsy activities, where I would ever need a sleeping bag I would totally buy this, but lets be honest I'll never be outdoorsy enough to need my own sleeping bag.

Inspired by... Emerald

When we were little our parents shielded us from almost everything, especially TV shows and movies. As result, I was (and, OK fine, am still) unnaturally afraid of basically every moderately scary part of every show and movie. I remember going outside during the flying monkeys scene of The Wizard of Oz and watching the movie through our glass sliding door. It's always less scary without sound. Previous history with Frank L. Baum's gang aside, I'm anxiously awaiting this:



OZ: The Great and Powerful comes out in March, so until then we'll have to channel the Emerald City via the Pantone Color of the Year.

Denver Art Museum


I'm not sure about you guys but I am still in deep mourning about the end of Gossip Girl so today I decided to get off my booty and channel my inner Blair Waldorf by heading to the museum and to eat my fill of macarons.

First I stopped by Katherine's Bakery in south Denver to pick up some macarons. I've been craving them for weeks now and finally picked some up!

Apparently I only post pictures of myself eating... maybe someday I'll put up a real picture...maybe.

Chicken Panang

Three years ago, on a break from school Theresa came home with this new recipe she was obsessed with and wanted our family to try. Being a resistant teenager, I was not feeling what she was doing in the kitchen, but once she forced me to try it I was in love. Years later I, too, am obsessed with panang and claim it be my favorite meal. I even try to convince my roommate to go to the thai restaurant by our dorm as many as 3 times a week, so I can get my panang fix. Well now that I am home for break, I am able to just make it for myself! 


I couldn't help myself from eating as I cooked, it's just so good! 
(I haven't been outside my house today so my appearance is iffy at best...sorry!)



Chicken Panang


Ingredients: Serves 4-6 (Unless you're me and then it serves 2 ish...I really like panang...)
  • 2 tbsp. oil
  • 2 tbsp. chopped garlic
  • 1 tsp. grated ginger
  • 2 tbsp. Red Curry Paste
  • 2 cans coconut milk (13.5 oz. each) 
  • 1 1/2 tbsp. brown sugar
  • 1 tbsp. reduced sodium soy sauce
  • 1 1/2 tbsp. lime juice
  • 1/4 cup roasted and unsalted cashews
  • 2 breasts of cooked chicken
  • 1 bunch of green onions chopped
  • 1 cup red bell pepper
  • big handful of green beans
Assembly:
  1. In a seasoned wok, heat oil on medium heat.
  2. Once hot, add ginger and garlic and let cook until light brown.
  3. Stir in curry paste.
  4. Whisk in coconut milk, grated palm sugar, soy sauce, and lime juice and turn heat up to medium-high. *Add the lime juice little by little until it’s just how you like it. 
  5. Add veggies and chicken and cook until veggies are cooked completely.
  6. Top with crushed cashews and top part of green onion.


Eat up! :)
