Truck Yard

Earlier this week, Theresa and I discussed how we both wanted to start blogging again. I was thinking about it and I don't know why I ever really stopped. In a city like Dallas there are 1000s of new things to try and see every week, so I am back and I am going to take you on a trip around my city. 

First stop: The Trunk Yard

I have to premise with the fact that I had literally no idea anything about this place. A few friends and I were soaking up all the sun and good weather we could before it gets cool again by laying by the pool. We stayed until we were basically withering away from starvation. Finally after having enough of our moaning of hunger, someone mentioned hearing about a cool place where food trucks gather was suggested, I literally jumped out of the cabana and back into my clothes. My intense response hurried my friends and we were off to discover what may be one of my new favorite spots to hang out.

Situated just of the trendy Greenville Ave just north of Dallas. Truck Yard is a super chill place that has a rotating circuit of food trucks and a permanent airstream as a bar.  




 There is a tree house, a stage for bands or movie nights and a lot of lawn chairs and tables for people to sit in. 

                            
There was an Italian food truck, a sliders/grilled cheese truck, and a Chinese food truck. I, extremely typically, chose Chinese. I think I am actually addicted to Asian food. Is there a support group I can join for that? I ate this delicious "Bombay Chilled Chicken" from Bombay Chopstix and I cannot recommend it enough. Unfortunately there is not a picture, I'm sorry and to quote myself, "Too hungry! There is no time for pictures!" 

But I did snag this picture of the my number, while I was waiting for my food!
This is the view from the tree house. Yeah, you read that right, there is a tree house. A tree house…at a bar. I know, right, this place is awesome! 


It wasn't until we arrived that we found out that it was actually a bar. How cool is that air stream turned bar? It really keeps with the truck theme and I love it. 


And all the marquee lettering? Could this place be any cooler? Probably not.

Yes, I am mildly obsessed with the Truck Yard. It is open Monday - Sunday from 11:00 am - 12:00am.  Check it out!

Chicken Panang

Three years ago, on a break from school Theresa came home with this new recipe she was obsessed with and wanted our family to try. Being a resistant teenager, I was not feeling what she was doing in the kitchen, but once she forced me to try it I was in love. Years later I, too, am obsessed with panang and claim it be my favorite meal. I even try to convince my roommate to go to the thai restaurant by our dorm as many as 3 times a week, so I can get my panang fix. Well now that I am home for break, I am able to just make it for myself! 


I couldn't help myself from eating as I cooked, it's just so good! 
(I haven't been outside my house today so my appearance is iffy at best...sorry!)



Chicken Panang


Ingredients: Serves 4-6 (Unless you're me and then it serves 2 ish...I really like panang...)
  • 2 tbsp. oil
  • 2 tbsp. chopped garlic
  • 1 tsp. grated ginger
  • 2 tbsp. Red Curry Paste
  • 2 cans coconut milk (13.5 oz. each) 
  • 1 1/2 tbsp. brown sugar
  • 1 tbsp. reduced sodium soy sauce
  • 1 1/2 tbsp. lime juice
  • 1/4 cup roasted and unsalted cashews
  • 2 breasts of cooked chicken
  • 1 bunch of green onions chopped
  • 1 cup red bell pepper
  • big handful of green beans
Assembly:
  1. In a seasoned wok, heat oil on medium heat.
  2. Once hot, add ginger and garlic and let cook until light brown.
  3. Stir in curry paste.
  4. Whisk in coconut milk, grated palm sugar, soy sauce, and lime juice and turn heat up to medium-high. *Add the lime juice little by little until it’s just how you like it. 
  5. Add veggies and chicken and cook until veggies are cooked completely.
  6. Top with crushed cashews and top part of green onion.


Eat up! :)
